Shine's Kitchen Winner - World's Best Salsa!

World's Best
Salsa
This salsa is such an absolute crowd pleaser and has the amazing bonus of being
a fermented food, thereby containing beneficial bacteria for your body's good
health. :)
Makes 1 quart
Use fresh ingredients
4 medium tomatoes, diced (can be peeled and seeded as well if you're
feeling ambitious)
2 small onions, finely chopped
3/4 cup chopped chile peppers, hot or mild
8 cloves garlic, peeled and finely chopped
1 bunch cilantro, chopped
1 teaspoon dried oregano
juice of 2 lemons
1 tablespoon sea salt
4 tablespoons whey (liquid form), (or an additional tbsp salt if whey is
unavailable)
1/4 cup filtered water
Mix all ingredients and place in a quart-sized, wide-mouth mason jar.
Press down lightly and add more water if necessary to cover the
vegetables. The top of the vegetables should be at least 1 inch below the
top of the jar. Cover tightly and keep at room temperature for about 2
days before transferring to cold storage (or the fridge). You may want to
use a slotted spoon to dish up because there is a fair amount of liquid in the
jar which is necessary for fermentation. This will keep for many months
in the fridge or other cold storage (under 4 degrees celcius). This salsa
is so worth the extra wait time to allow it to ferment - the process creates a
whole new flavor - delish! For those who are ambitious, instructions for
making whey at home can be found online - it's super easy. :)
