***Recipe of the Week***
Baba Ghanoush
1 large egg plant
2 cloves garlic
4 tbsp sesame butter
juice of one lemon
1/2 tsp salt
3 tbsp fresh parsley
1/2 tsp ground cumin
pinch cayenne
2 tsp dried mint
Pre heat your broiler, prick one large eggplant with a fork and roast it
until the skin is very blackened and charred, turn it to get all sides.
Peel away charred and skin and rinse mushy eggplant to remove any
blackened skin. Place into a blender or food processor with the
remaining ingredients and blend well.
Serve as a dip with toasted pita chips, veggies or as a sandwich spread.
