***Recipe of the Week*** 

 
Easy Baked Burritos

2 ¼ cups kidney, pinto or black beans (5 cups cooked)
12  flour tortillas
3 cups hot salsa
sour cream (optional)
2 cups sharp cheddar cheese (optional)
1 finely minced onion                   
5 cloves minced garlic
2 chopped green peppers               
2 cups frozen corn
2 tbsp. chili powder                   
1 tbsp. cumin powder   
1 tsp. oregano                       
2 tsp. coriander seed, ground
1 tsp. salt, less if beans are canned           
½ tsp. cajun spice, or more
1 small can tomato paste                               
½ cup chopped olives

Soak, wash, and cook, beans; when beans have cooled slightly, mash
Grate cheese and set aside
Make the bean filling by sautéing onion, peppers, garlic, corn, and spices
When veggies are soft add mashed beans, tomato paste, and olives
Lay a tortilla flat on the work surface, spreading about 2/3 cups of the bean mixture on each 
Add cheese if desired and roll evenly, trying to get the filling to fill the roll evenly but not be lost out the end
Lay stuffed tortillas seam down into an oiled baking dish; pour 2 tbsp of salsa along each burrito before baking
Bake in a tightly covered casserole dish for about 15 minutes in a pre-heated oven at 400 degrees F.
Sprinkle with a little cheese and bake 5 minutes more (optional)
Serve with salsa and sour cream
