Spinach Cannelloni
Ingredients:
20-25 Lasagna leaves (1 pkg)
2 Tbsp margarine divided
1/2 pkg bacon, chopped
1 small onion, chopped
200g frozen, chopped spinach (thawed), drained lightly
300g Ricotta
1/2 C Parmesan, grated
2 egg yolks
1 tsp salt
1/4 tsp nutmeg
ground pepper
Method:
Cook Lasagna according to package instructions. Place in cold water until
needed.
Prepare filling: Melt 1 Tbsp margarine in frying pan, add bacon and fry for 2-3
minutes, add onion and sauté. Add spinach and cook over low fire for 5 minutes.
Let cool slightly.
Mix ricotta, parmesan, egg yolk and spices and add to the spinach mixture. Mix
well. Place Lasagna leaves on kitchen towel and spoon about 1-2 rounded Tbsps
of filling on each leaf. Roll up and place in greased 9x13" baking dish.
One layer only! Brush Cannellonis with olive oil and sprinkle with parmesan.
Bake 25-35 minutes at 395 F.
Serve with tomato sauce and salad.
I hope this works. My family likes this food a lot and my boys 4 + 10 don't
mind the spinach at all :-).
