Carol Sent in a recipe for a Yummy Rice Salad... Mmmmm!!
Healthy & Yummy Rice Salad ~ Perfect for Summer Picnics
1 cup brown rice
1 cup wild rice
4 cups chicken broth
4 stalks celery, sliced
5-6 green onions, sliced
2 cups thawed frozen peas or fresh peas if you can get them 1/2 cup pine nuts
3/4 cup dried cranberries and/or dried apricot pieces
Salt and pepper
1/4 cup olive oil or other healthy oil ~ your preference
2 Tbsp rice vinegar
1 teaspoon honey
2 Tbsp dark sesame oil
1 Put the chicken broth in a medium sized saucepan. Add the wild rice, bring to a boil, reduce heat to low, cover and let cook for about 10 minutes. Add the brown rice, cover and continue to cook for a total of about 45 minutes. Remove from heat. Scrape rice into a large bowl and cool completely.

Heat a small
skillet on medium high heat. Add the pine nuts. Cook, stirring frequently,
until lightly toasted. Remove pine nuts from pan and let cool.
3 Put the oil of your choice, rice wine vinegar, honey, and dark sesame
oil into a jar and shake OR use a wand blender to mix together.
4 In a large bowl gently mix together the cooled cooked rice, sliced celery, green onions, peas, dried cranberries, pine nuts, and dressing. Add a bit of salt and pepper to taste, if desired.
5 Chill Completely before serving...Serves about 8-10!!
