Baked Parmesan Chicken and Potato Dinner
Ingredients
4-6 skinless boneless chicken breasts
2 medium unpeeled russet potatoes cut in 1-inch cubes
1 green or red bell pepper, cut into 1-inch cubes
1 medium onion, cut into 8 pieces
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/4 cup grated Parmesan cheese
Directions
Preheat oven to 400. Pat chicken breasts dry with paper towel and place chicken into corners or edges of 13 x 9 baking dish/pan. Put potatoes, peppers and onion in the center of the baking dish. Drizzle olive oil over chicken and vegetables; sprinkle with garlic powder, paprika and cheese. Cover with tin foil and bake, stirring vegs once halfway through cooking time, for 40-50 mins or until juices run clear when chicken is pierced with a fork and vegs are tender.
